The Bushwacker is a fun, decadent drink that’s like a chocolate Pina Colada. We’re not just talking chocolate either. No, this frozen cocktail is full of sweet stuff including delicious dark rum, killer-coffee Kahlua and captivating coconut that mix with the creme de cacao for one of the best blended drinks out there. Some recipes you find for the Bushwacker may call for Pina Colada mix, but just as in that drink I highly recommend avoiding that short cut, it’s not worth it.

The Caribbean is a hot place and this bald man usually has sweat rolling down his head. When that’s the case, there’s nothing better than a frozen Bushwacker to cool oneself down. This is a photo of me drinking one hell of a Bushwacker at Miss Lucy’s on St. John. It tasted even better than it looked! You have to go try one when on island!

Another good place to grab a Bushwacker is at One Love and Ivan’s Stress Free Bar on Jost Van Dyke in the British Virgin Islands and at Rum Point on Grand Cayman. Those are some of the best one’s I’ve had.

Bushwacker Recipe

    • 4 oz cream of coconut
    • 2 oz Kahlua® coffee liqueur
    • 1 oz Dark Rum
    • 1 oz Dark Creme de Cacao
    • 4 oz milk

Combine ingredients with two cups of ice in a blender. Blend until smooth, and serve up in two 12 oz cups. Raise glass and toast.

    My first Bushwacker was in CULEBRA @ DiggyDoc wow i had 2 large ones and a small one for the road and i was a Happy Camper awesome drink love it.

    The original recipe as developed and named by Angie Conigliaro and myself, Tom Brokamp, at the Ship’s Store Pub in Sapphire Village in the Spring of 1975.

    The Bushwacker
    1 ½ ounces Vodka
    ¾ ounce Kahlua
    ¾ ounce Dark Crème De Cocoa
    2 ounces whole milk or half and half
    1 ounce Coco Lopez cream of coconut
    1 splash triple sec

    Blend with ice and top with sprinkle of freshly grated nutmeg.

    The History
    The Ship’s Store was owned by Rudy Thompson and Dick Holmberg.
    I was the manager of the Ship’s Store at the time and Angie was a bartender.
    With a tip of my hat towards nepotism, I am Dick Holmberg’s nephew and first cousin to the Humbugs of sailing fame. Angie is (was?) a first cousin to the Conigliaros of Boston Red Sox Fame. The restaurant still operates today under different ownership as the Grapevine Grill.

    The concoction was originally thrown together by Angie at my suggestion as a tropical variation to the White Russian. Together we tweaked it, the Crème de Cocoa was substituted as a cost saving measure only, Kahlua was used exclusively during development.
    Had it not been for Angie’s single handed efforts the drink would have soon been forgotten in a blurry hangover. Not yet earning a name, Angie pushed it on anyone and everyone for weeks as a creamy, kick butt sort of Pina Colada drink.
    After the final recipe was decided upon a few weeks later and during a particularly slow evening two gentlemen wondered into the bar together with their large dog. At least one of the men was a flight attendant based in N.Y. They were flamboyant and very proud of their pet which I believe was a pure bred Afghan Hound. It was odd to see such a large dog visiting the islands for such a short stay (3 nights) however I’ve always supposed that the flight attendant status allowed the dog to travel for a reduced or free rate. These two fellows immediately fell in love with Angie’s concoction and the few people in Sapphire Village at the time fell in love with the dog. The dog’s name was Bushwack and Angie suggested that the new drink share his name.

    I understand that there have been more then a few bartenders who have claimed its invention over the years, shame on them. There is one particular bartender who works at some ritzy establishment who claims it as his own. He also claims he invented it using Baily’s Irish Cream. He’d have to have lived in Ireland to do that however since Baily’s was not invented until 1974 and if memory serves me it was not introduced to the V.I. Until 1978. A letter explaining this false claim was sent to the manager of said ritzy establishment about a year ago and as yet has gone unanswered.

    There was another popular Sapphire Beach bartender who claimed the Bushwacker as his own however he conceded my claim after we had a man-to-man conversation.

    Many people are unaware there is a festival named in the beverages honor that occurs each August in Pensacola, Florida. The Bushwacker was introduced to Pensacola in 1975 by the then owner of the Sandshaker Lounge. More information can be found at

    As for Angie’s where-abouts I have no clue, the last time I saw her was at Carnival Village in 1979. I always imagined she returned to Boston but if any of you readers can locate her please give her my regards.
    As for me, I left the Ship’s Store in 1978. I continued living and working in the VI until 1980. I own a restaurant in the Blue Ridge Mountains (we don’t sell Bushwackers) and I have two children with my wife, a gal I met at the Ship’s Store in 1978. I return to the V.I. on a regular basis.

    I also know the drink has been tweaked continually over the years especially and that is just fine. However you enjoy it is what is most important.

    Tom Schroeder and Steve’ sorry to say I am afraid you are mistaken.

    I am familiar with the Sandshaker Lounge in Pensacola FL, and it’s previous owner. We met back in 1975 when a very good friend of her’s worked for me at the Ship’s Store at Sapphire Village (Now the Sapphire Bar & Grill)
    The following excerpt was copied from Sandshaker website:
    “It all started back in 1975 when the Shaker’s previous owner visited Sapphire Beach Village, St. Thomas in the Virgin Islands and tasted a drink they called “Bushwacker.” The drink was so tasty that the owner decided to try it out on the customers back home at the Shaker.”

    1/2 oz. dark rum
    1/2 oz. vanilla rum
    1/2 oz. vodka
    1 oz. Kahlua
    1 1/2 oz. Baileys
    3/4 oz. Amaretto
    1 oz. Coco Lopez
    No milk or other sissy stuff, which matches what Raquel told me the first time i tried it – nothing but alcohol and ice

    My first Bushwacker was this summer July 2011 at Hooters in Destin which was recommended to me by Danielle who is beautiful and brilliant I loved this drink and I am a beer drinking gal and not to keen on the sweet stuff. Yet as it was on vacation and wanted a different yet inviting drink. She made my evening and I had two, thanks for all the recipes and information on this wonderful drink. I will enjoy drinking and making these for many summer’s to come !

    The BEST BUSHWACKER, hands down, is at Seddy’s One Love on Jost Van Dyke. I’ve had Bushwackers on other island and at different bars and they just cannot beat Raquel’s Bushwacker at Seddy’s!

    I don’t care who made it up first. All i do know is the best one I have ever had is from One Love on JVD!!! My daddy loved them so much that we celebrate his memory every December 26th by blending a bunch up. I takes me back to sand between my toes, listening to Foxys stories and jokes, and being amazed by Seddys magic tricks. Good Times!

    This is the recipe that I’ve found to be great!
    **”part” can be oz. or cup 🙂

    1 part light rum
    1 part dark run
    2 parts Kahlua
    2 parts Creme de Cacao
    1 part Coco Lopez
    2 parts Bailey’s
    1 part Amaretto
    Blended with ice, topped with whipped cream and nutmeg

    Hi Ryan,
    Just made your frozen concoction after trying a few other recipes and this taste almost like the Bushwackers I’ve had at Tacky Jacks in Gulf Shores. Only difference is I used 2oz. Cream of coconut and 2 oz. coconut rum and a Bacardi 151 floater on top. Pretty darn good! I’ve been having trouble with the consistency though, it’s not thick and “slushy” enough in my Waring Blender soooo I’m going to try our Margaritaville frozen concoction maker. Maybe that’s the ticket to a cold, slushy Bushwacker here at home.

    Just made these drinks at the Elks Spring Meeting in Augusta. We had been to Gulf Shores and had them at Tacky Jacks and FloraBama’s. They were a big hit in Augusta and will certainly be our “special” at future meetings!

    Tacky Jack’s Famous Bushwacker

    2 scoops vanilla ice cream
    light rum
    coconut rum
    Bacardi 151

    Mix equal parts light rum, coconut rum and Kahlua. For each drink, take 2 oz. of that mixture and blend it with the ice cream. Put into a glass and top with a generous splash of the Bacardi 151. Swirl the 151 into the drink very lightly, and top with a cherry (you can line the cup w/chocolate syrup before you pour the mixture into it).
